According to Ayurveda there are six tastes in our diet (sweet, sour, salty, pungent, bitter and astringent) that are comprised of different combinations of the elements (earth, water, fire, air, space). Each of these therefore have a unique set of qualities (heavy, light, wet, dry, warm, cold) and affect us differently (e.g. increase or decrease vata, pitta and kapha). What we eat and drink will affect our current state of balance (or imbalance!)

Bitter herbs (like rocket) are comprised of space and air so have light, dry and cold qualities, the effect of which is to decrease kapha (dampness) and pitta (heat) and increase vata (space). They increase ‘space’ in the body by draining and drying excess fluids and support detoxification by encouraging the flow of bile and the activity of the liver.
Excess dampness, ama (toxins) and heat are reduced as the bitter flavour dries and drains them out. So consuming bitter foods and drinks can assist with the cleansing process of toxin removal.
